A proving basket lends support and shape to dough during proving. By letting the dough rise in the proving basket, it will provide the loaf with form and shape. It will also absorb moisture from the crust before you turn it out onto a tray to bake. This very thin, drier outer layer means you can easily cut the dough and create beautiful decorative patterns on your loaf of bread.
Bread is not baked in proving baskets. The baskets are used only to give your bread shape and structure like that of traditional artisan bakeries.
